Roasted Beet Salad
Tuesday, July 4, 2006 at 11:39AM -Wash desired amount of beets. (Usually I used 6 large beets)
-Bake at 400 degrees for about an hour, or until soft when stuck with knife
-Let beets cool.
-Peel beets and dice into quarters or smaller pieces
-Drizzle extra-virgin olive oil and balsamic vinegar (use a higher grade of both. I was amazed how much better a slightly more expensive bottle of balsamic vinegar was than the usual $4)
-Salt & pepper to taste
I also like to add slices of hearts of palm...which go especially well with beets.
